Greek-Lemony Salmon & Potatoes Ready in Under an Hour!!

Ingredients
2 pounds salmon fillet
2 pounds golden or russet potatoes, in wedges
finely chopped fresh dill
The Ladolemono Dressing:
1/2 cup olive oil, or less
1/2 cup fresh lemon juice
6 garlic cloves, grated
2 teaspoons spicy mustard
2 teaspoons dried oregano
Instructions
Preheat the oven to 425 °F, 220 °C.
Combine all of the dressing ingredients in a bowl and whisk together.
Place the potato wedges in a sheet pan. Pour half of the dressing over them and season with salt and black pepper.
Roast the potatoes on the center rack for 25 minutes.
Make room for the salmon and add it to the pan. Pour the remaining dressing over...

Reminds me of a southern tomato galett. I make several during fresh tomato season & freeze 4 or 5 for over the winter. I make mine with sautéed caramelized onions. I'm going to try your way when my tomatoes are harvested. Thanks! BEAUTIFUL 😍

Although the original recipe is strictlly vegan because it's a cake eaten during lent, it'll definitely become my new go to cake for potluck events. Delicious. I have found just squeezing the cucumbers does not release enough liquid as my first try was too thin to suit me. I have only had it on a Gyros before so maybe it is suppose to be on the thiner side. Anyway, after squeezing I squeezed agan in some cheese cloth and then some paper towel, perfect for me.I made Flat Bread bread to go with this. They were so easy to make. With her other recipes I've made I'm beginning to feel as if I'm a bit Greek.
